Cast Iron is the best.
If the pan is small, it would be great for something like the Jiffy Corn Bread Mix.
Since I have so many cast iron pans, I might be able to suggest other uses but I do not have a mini. What is the size?
The Jiffy mixes are really good.
I like the corn bread but I am still looking for a recipe that my mother used for cornbread. All I remember is that she used a little bacon fat and made it from scratch in an old iron pan.
If you are looking for cast iron pans, there is a great deal of info on DU about them. Everyone loves them, some have different ideas about seasoning or cleaning but, that aside, they are the best way to cook! If you want to extend your cast iron inventory, start looking at yard sales. Even the great told ones, crusty and ugly can be cleaned up. The caveat---make sure the bottoms are level and not warped from heat. Cleaning info is easy to find.

Anything you can think of that will not overflow the sides. What a great pan. Never saw one before your post.
Also, I never bought a Lodge pan. I aim for the grungy old cast iron, then clean them up.

Anything cooked in them is great.
