Andalusian Chicken

Ingredients
4 chicken legs, skinned and split
olive oil
1 large white onion, chopped
2 large garlic cloves, minced
1 t cumin
1/2 c dry sherry
1 c freshly squeezed orange juice
1 T grated orange zest
2 plum tomatoes, skinned and chopped
3/4 pitted green olives

Directions
Pepper the chicken and then brown it on both sides in olive oil. Remove chicken. In the same pan, add onion and cook until translucent--about 5 minutes. Add garlic and cumin and cook for a minute. Then and sherry and cook until it's reduced, about a minute. Return chicken to pan, add orange juice and simmer, covered, for 15 minutes. Then add orange zest, tomatoes, and olives, cover and cook for an additional 25 minutes. Serve over rice or pasta.
