What's for Dinner, Mon., Dec. 22, 2014

I don 't know! I am bedazzled by the choices! I have giant Florida Gulf shrimp in my frig, plus two prime pieces of lamb. Pork ribs and a pork chop. Ground beef and ground pork from the Polish butcher (best place to buy around here).

Plus about every kind of veg one can buy at this time of year. I shopped for all this out of fear of the Christmas rush over the next two days.

So I think I'll go with the lamb, using rosemary and garlic to season.

So I'll be eating that for a bit, tonight included. It was very good. Also, broccoli in cheese sauce on the side.

One of my friends was doing a fundraiser for our favorite siamese cat rescue group by smoking pork butt roasts. He used a bourbon and brown sugar rub. It is delicious. Worth every penny I donated, plus I gave my family BBQ for Christmas!

4. Rueben casserole

toast up some rye bread
open a can of corned beef
1 and half cans of kraut
1000 island dressing
shredded swiss.

in a casserole dish layer
bread, meat, kraut, dressing, swiss, bread.

put in a 350 oven until brown, warm and bubbly
about 30 - 45 minutes

it is very good ... 1 can of kraut will work .. 2 cans are over powering ...
