What's for Dinner, Tues., Oct. 28, 2014

Have a slow cooker with some cannellinis going. Soaked them last night, and put celery, carrot, onion with a clove, and peppercorns. Oh, and lots of olive oil. This is in the soaking water (of course I washed the beans prior to putting them in this concoction). This is something the RG taught me, whose cannellinis are the best thing going.

The fragrance will be wonderful once they get cooking.

Today is a home office day for me, mostly doing paperwork, but I look forward to trying out a recipe Galileo found for me for onion rings. Yum! See link on yesterday's thread.

Last night, I roasted some asparagus; I'm planning on having that as a salad, with some other ingredients, of course.

Oh, and here's something I did last night with my stuffed peppers that I will repeat every time I make them in the futre, as the peppers got a golden brown, plus they were sweet and delicious. Instead of parboiling the peppers before stuffing, I took some garlic olive oil and a pastry brush and painted them up, inside and out. Then I put them in the oven and roasted them at 350 for about 20" while I did my stuffing. Put the heated stuffing mixture in and topped them with cheese until it melted.

They were divine!

I have everything except the squid, so it's off to the Mexican grocery store today. (Why Mexican? Because the mega-marts in the high desert are devoid of variety. Remember where I live: "We have BOTH kinds of seafood - catfish AND trout!)

I soooo want to move...

7. Chicken parmesan

In addition to my cannellinis, I also made chicken parmesan. Made my own tomato sauce, too. That's what I had for dinner. Dessert was a slice of chocolate mousse cake, dropped off for me by a friend who had gone to a restaurant.

Roasted some beets for salads for the rest of the week. Breaded and baked a tray of eggplant slices.

Wanted to make the onion rings but forgot to get the buttermilk when I went out!

Anyway, nice to have some things in the frig to work with.
