Cajun Shrimp and Quinoa

I have a friend who thinks there's no food as good as Cajun. This is her recipe.

3/4 lb. large shrimp, deveined and peeled
4 tomatoes cut into chunks
1 jalapeno seeded and chopped
1/2 C chopped onion
2 cloves garlic minced
1 T. tomato paste
3 T. olive oil
2 1/2 tsp Cajun seasoning
Salt and pepper to taste
2 1/2 C cooked quinoa
1/2 C fontina cheese shredded

Toss shrimp and 1 tsp Cajun seasoning together
Toss tomatoes with 1 tsp Cajun and 1T olive oil
Heat 1 T olive oil in iron skilet over medium heat
Cook shrimp till opaque 2-3 min. on each side
remove from pan and set aside
Add 1 T olive oil in skillet with onion, jalapeno, garlic
Cook till tender
Mix in quinoa, tomatoes, tomato paste, 1/2 tsp Cajun seasoning
Sprinkle cheese on top
Bake in 350 oven 20-25 min. Last 2 minutes turn on broiler
until cheese is brown and bubbly
