10. I found this great carrot recipe in my Italian cookbook.

It is time consuming but makes the best carrots I have ever had.

Slice them about ½ inch thick and place them in single layer in sauté pan.

Add 3 T butter and water about ¼ inch up the side.

Cook on low until water is gone.

Salt and add about ¼ tsp sugar.

At water 3 - 4 T at a time until carrots are browned and wrinkly and caramelized. Let most of the water simmer off before adding the next bet.

This takes about an hour, maybe longer.

Right before serving, sprinkle parmesan cheese and stir to coat.

Absolutely delicious. You can make them ahead of time and reheat with the cheese right before serving.

Put carrots, butter and maple syrup into a saucepan (amounts are by eye), put it on a low fire and cook until the carrots are done and the the sauce thickens a bit and clings to the carrots. Never added parmesan to them, though. It's an interesting addition.

but the soup is just about all a) i have the energy for and b) sounds edible.

i'm counting myself lucky that i don't feel cruddier. no chills/fever/aching, just a cough and chest congestion. i'm loading up on garlic, vitamin c and water and should probably take an expectorant just to speed things up. i'm also hoping the toddy will help, but boy, is it nasty. i am not a whiskey girl.

I had about 1/2 lb of something wrapped in foil (unlabeled, of course!) which I took out of the freezer last night and into the fridge. Turns out it's the last of the leg o' lamb.

So, I'll pan sear that with some garlic. I have some leftover mushroom risotto which I'll loosen up with some stock. And then a small salad to boot.

ps: note to self - get a Sharpie.
