Tuesday supper? What's on your table tonight - August 19, 2014

I am making arnacini for the first time.

I mad extra risotto last night because I wanted to try this. It is basically rice balls that are breaded and fried. I have had them in pizzerias and I love them, so I hope mine turn out ok.

There was enough left over for about 20 apricot sized balls. I am freezing most of them for later use.

Also on the menu a romaine salad with gorgonzola vinaigrette.

What's on your menu?

This is a 60% yeast dough; a pound of flour, 12 ounces of waterand 4 ounces of butter sweetened with a half cup of sugar. Split 3 pounds of Italian prunes and pack them tight. Sprinkle liberally with sugar. Bake at 350 'til the crust browns. I plan to put streusel on the next one. You can also dose it with schlag or sour cream.

This is schlag.

Actually, so is this,

but I'd go with the whipped cream.

We are currently exploring ways of preparing fresh fruits for dessert, but dried fruits are a must when the season ends.

Hope it was great.

With arugula and romaine mixed. Grilled onions. Gorgonzola dressing.

Also roasted up about 24 red and yellow bell peppers. The RG had just purchased some new olives oils and we tried them. So very, very good.

Planning surprise b'day party for the RG this weekend!

p.s. still on library computer--downed pole/tree was caused by an accident. Electrical and internet people have to reconstruct the poles, etc.

also, cbayer, I recall arancini rice balls from "the old neighborhood," i.e., the one we lived in a couple decades ago! The Italian bakery would have them. Loved 'em.

How did you make yours?

Does the RG like anchovies? If so, I have a suggestion for those roasted peppers at his birthday party.

What are you planning for the party?

The rice balls came out perfectly. You can make them ahead of time, freeze them, then fry up when you want them. I had never had them until recently, but could eat them pretty much every day.

Using the leftover meatballs and sauce, I'll make a meatball sub with sharp provolone cheese. (The sharper, the better!) And a little salad on the side.

not carnitas, just diced loin fried up, cabbage, onion lime and vinegar based salsa (I think we have Tapatio at the moment) the rest of the house will use cheese, but I find it a bit too much with pork

pinto beans on the side
