Tonight's efforts will go into the appetizer: jalapeno poppers. Almost everything else is already made.
Curry-cauliflower soup.
Salad with tossed greens and some type of homemade dressing that I have yet to figure out.
Long day of negotiations with our union. Mostly just want a glass of red wine!

(106,886 posts)Broiled blackened white fish goes into the soup just at the end to simmer together. Plums on the side.
I do enjoy the Asian inspired soups. If you have a good broth as a base, you can clean out the fridge and it'll always be awesome.

(50,130 posts)Canned salmon is a bargain, and it is wild caught. And very nutritious. A couple of generations of Americans grew up on salmon patties made from canned salmon, so it is comfort food.
Here's how I make salmon patties for two or three people:
1 can salmon
1/2 cup small diced yellow onion
big pinch dill weed or fresh dill minced
2 T lemon juice
1 sleeve of saltine crackers, crushed
1 egg
1/4 cup milk
Drain the juice from the salmon can into a mixing bowl. Dump the salmon into another smaller bowl and pick out the bones, skin, etc.
Put all the ingredients into the mixing bowl, and mix well, breaking up the salmon chunks.
Form into patties and saute in melted butter in a frying pan on medium heat until browned on both sides.
Serve with lemon wedges or juice.

If you want to use fresh salmon for your patties, I'm sure there are many good recipes on the Internet. I don't have one on hand.

i'd been getting home too late this week to feel much like cooking, but my shift was cancelled today and we can eat dinner at normal person time.

(2,016 posts)Thighs using a spicy homemade shake n' bake (sort of a go-to for me). Pinto beans with jalapeno, topped with raw onion, and some (plain-ol') spud salad I made the other day.
A first: dessert (when do I call out dessert?) Fresh sliced nectarines in plain yogurt. This time of year, I'm a nectarine fool. I love the crunchy white nectarines.
