i know the rest of the bbq pork roast will be gone by the time i get home (husband went nuts over it, so i'll let him finish it), so i'm just going to punt tonight. maybe a bare-bones salad, maybe some brown rice and broccoli. it'll just depend on what i feel like doing when i get home.
i'm now able to move around with just the brace and it's good to be in the kitchen again.

(2,012 posts)What recipe do you use? A couple online use tomatoes, basil, onions, cheese and mayonnaise. One puts sour cream in the crust, which I've never tried. I have only one tomato plant this year but it has given me lots of small, sweet tomatoes.
In Italy the pizza I had used fresh tomatoes unbaked on top and it was delicious.

(1,136 posts)But instead of mayo, I used cream cheese on top. Read that in one of the reviews. This recipe calls for tomatoes, basil, garlic, cheddar, mozzarella, and mayo. Was pretty easy - biggest pain was laying the toms out with salt to remove excess liquid, which I think I did for a little too long...I got sidetracked with a work call, so they probably set out for 30 mins instead of 10. It was slightly dry, but still delicious!
I like to make deep dish pizza with fresh tomatoes instead of sauce. The tomato pie reminds me of that, only difference really is the crust and the ingredients are layered in the pie.

Plus chicken breasts with the crust made from parmesan and panko.
Might roast a cauliflower using this recipe I got from a tasting at TJ's. It was so delicious--had mustard in it and then the cauliflower head was roasted. It's kinda' hot here today, though, so I'm wavering on that one.

Grilling the dogs was no treat, either - that polar vortex is gone, and we're starting to get real summer temps again, although at least so far not the scorcher we had last year.

Supper? Some leftover lasagne. Very, very busy this week.
