What's for Dinner, Thurs., June 19, 2014

Probably the favorite Portuguese restaurant in the Ironbound for us, as the RG is coming in from Chicago late afternoon.

Maybe the grilled shrimp entree? Or go with a couple appetizers, like the fish croquettes and some calimari.

Hope you are well, hope all my ol' C&B buddies are happy (I KNOW you're well fed!). Since last August I've been learning how to eat all over again. I can barely stand to read the posts here of all the creative and tasty dishes you do. After a bout of food poisoning that damaged the gluten processing abilities of my body, I have been gluten-free, dairy-free, and sugar-free, so there has not been much for me to write home about. After being on this diet since last August, I am finally turning the corner and am able to use my hands and arms again. I've always been able to type a little because my fingertips never quit (they hurt like a MF, but they could handle small jobs), but I haven't been able to cook because my hands were not strong enough to grip a knife, or a cooking pot, or on most days even the weight of a dinner plate. I've missed you all!

Was this a toxic reaction to a bacteria, like a Guillain-Barre syndrome?

I am so glad to hear you are on the road to recovery.

At first it seemed to be a case of rheumatoid arthritis, and lucky for me the previous surgery on my esophagus made the current new therapies for it inappropriate for me. My acupuncturist suggested the diet as a way to reduce pain, and it has been working slowly but surely. I am so grateful! Still, being relegated to meat/fish/veggies/fruit, while healthful and filling, is disappointing especially for someone who loves to bake as I used to do. On the other hand, cbayer, I am also experiencing one of the happiest times in my life. My play opens on November 6th in NYC! My whole focus has been on getting myself in good enough physical shape to get in there to rehearsals, meetings, etc., because I don't want to miss a minute of it! If you're sailing in our area in November, I hope you can come aboard!

Sometimes it takes a crisis to give us our lives back.

I am going through something similar, though distinctly different, right now. It is a huge crisis but also opening the door to a new path that I am very eager to take.

Would love to meet you someday and would particularly love to see your play. Not sure where my path will lead, but NYC is always a place on the list.

We have put the boat away in Mexico for hurricane season and are going to spend 3 months in a very isolated place in Italy.

Were I a writer, which I am not, this would be a fabulous opportunity.

But, then again, maybe I am.

It is a fabulous opportunity and if you let yourself, I have no doubt you will discover your writer side. You certainly express yourself well on these boards! If you are going to be so isolated that internet, etc., is unavailable, you may find that you can do A LOT without distraction. It will make me happy to think of you in the Italian sunshine this summer.

Not likely that I will be able to travel THAT far, but thanks for the invitation! And, now that you mention it, I have learned to make good pan gravies that are gluten and lactose free!

gluten-free, dairy-free, sugar-free,low-salt, low-fat etc. I have a friend whose health deteriorated for a long time, doctors couldn't seem to find the problem but finally was put on a gluten-free diet. After about six months she said she felt like a new person, she is no longer in pain, has a better outlook and has maintained good health for over a year now. In my case, I have always loved sweets, baked goods, ice cream and have a hard time, especially in the summer, though I do cut the sugar in half in most recipes. Have you found sugar substitutes and prepared foods or recipes which are satisfying and delicious?

if ever, and it's a shame she had to suffer so long. I am finally pulling out of the worst of it and no longer have to be dressed by my husband. Big win!! Sugar is off the menu completely for me, except for fresh fruit and fruit juices. and I don't trust the substitutes (back in the 70's I baked the most disgusting mess of chocolate chips and goo and ruined my cookie sheets using Splenda) although I have not tried stevia. I've only been able to peel veggies for a couple of weeks, but I'm getting there. I would like to develop a decent bread substitute. The most satisfying dessert I've had lately was a whole banana sauced with 85% dark chocolate and sprinkled with walnuts. The banana's texture was 'creamy' enough for it to taste like dessert. I'm glad your friend is better.

and I'm glad you have been able to come so far. When I was a child I was a "picky" eater and had some severe allergies to wheat etc. My mother said she let me have sliced bananas covered in Hershey's chocolate syrup with milk or ice cream 2 or 3X a day! May be the reason I feel I haven't really eaten unless I have dessert.

I have been making smoothies with sugar-fee sherbet and fruit such as apricots, oranges, grapes and lots of berries and some diet soda or fruit juice. I guess that's better than a chocolate shake? lol My daughter cooks with stevia and puts splenda in her coffee but I think it never tastes the same. Just have to work on it. Thanks for the inspiration.

was in 2001 when there were 1,236 members. I didn't sign in until 2004, but I've been here almost every day since--sometimes the C&B forum is the only forum I visit. The cooking blog is down now because I haven't been able to cook and because I've gone back to writing for theatre. Thanks for the compliment on my writing, I always enjoy your posts as well.

Edit: I decided to brine the pork in salt and brown sugar first, since dinner won't be for a number of hours.

I ate two pints of blueberries since Sunday! This time of year the craving for deeply colored fruits is very high. My border collie likes them, too!

with whole wheat buns, a salad with lettuce, apples, pecans, radish pods, pea pods and pickled mushrooms, and smoothies made with frozen strawberries, bananas, juice, and merlot.

(mainly I'm in this for the smoothies)
