mixed pinto and great northern beans cooked with Petit Jean smoked ham, peppers, onions and tomatoes.

Will serve with mixed spring green salad and cornbread.

I'm going to get him to grill the chicken I have when the wind calms down a bit, so I might make some chicken salad and stuff it into a red pepper.

I am loving the challenge of not turning on the stovetop or oven and I think we are eating healthier as a result.

Otherwise known as grilled NY strip steaks, and smashed potatoes with vermont white cheddar.

(Boil B size potatoes, then smash them halfway on a tray covered with aluminum foil and top with thin sliced cheddar, then pop them in the oven or also onto the grill just on the foil to melt the cheese down over the potatoes and let them crisp up some.)

The housemate likes flesh at every meal. I'm fine going vegetarian, but am also somewhat lazy about having to fix multiple different meals for each of us...

The taters sound delicious. I could boil them at night and pop them on the grill the next day.

We eat less meat all the time. We used to eat big slabs of beef and loved lamb chops.

But these days, if I cook meat, it is more often chicken than not. If it's red meat, I like it ground. I think it's an age thing.

I don't know how I did it (will ask the RG), but I made the best chicken roast ever. What made it so delicious was the wonderful brown sauce that resulted. Divine!

I put chicken sausages on the sides of the roast. The sausages had sundried tomatoes and basil in them.

Also made roasted tomatoes, roasted Brussels sprouts, and roasted potatoes with onions. Yellow rice with green beans.

It was quite a Sunday dinner production.

Ran out of energy for dessert, so that will be some milk chocolate and a glass of Australian chardonnay.

I worked too hard on outdoor spring cleanup yesterday, so I'm relaxing and reading English final papers for the rest of the day. This dinner has made it an almost perfect Sunday.

Carrots. Trader Joe's had multi-colored carrots the other day so I bought some of those.

I have them marinating in merlot wine and garlic. A few hours, and they'll be on the grill.

I'm thinking grilled potato wedges, and my fave - lightly steamed broccoli.
