I am in the mood for some good red meat and would like to have some for sandwiches later in the week.

I'm also in the mood for some sauteed spinach.

It's such a treat being in a place with an actual grocery store and I am really enjoying it.

I'm adding some canned, diced tomatoes and probably some frozen spinach, too. My local Bi-Lo had eggplants for a buck a piece. I found a nice one that I couldn't pass up.

of Scharffenberger dark chocolate for dessert.

A good day for healthy eating, really - lunch was a whole grain wrap spread with home made hummus with our own baby spinach, along with diced radishes, tomatoes, sweet peppers and cukes - with a side of carrot cabbage salad. yum!

You put together an amazing marinade and let it sit there.

This is the recipe I'm using today.

Now, with carnitas, you just go ahead and cook it in the marinade. Jerk is supposed to be grilled but I think I can find instructions to fake it in the oven although, after reading Stinky's comments on pork over the weekend, I wonder if the oven and not the stove is the way to go. Overcooked dry pork isn't good for much.

I cooked a turkey yesterday, with mashed potatoes, gravy, stuffing, and cranberries. I put most of the turkey in the freezer, since it was a big one, but saved some out to make the pot pie, and reboiled the carcass to make the soup stock/base.

I roasted orange and yellow peppers, tomatoes, and yellow squash. Mixed sauteed garlic spinach with ricotta and buttermilk. Did my layers. Turned out to be a stunning dish!

And it tasted good, too!

I had some lard in the fridge, so I fried the chicken in a combo of lard and vegetable oil. It came out real good. I use an old Jeff Smith recipe, which is very quick and easy, for the biscuits. The collard greens are from the yard, done pretty simply with a bit of bacon, some onion, and garlic. This was not exactly a health meal.

My husband loves him some red meat.

And since I have begun an exercise program, I decided it was cool to indulge in a big way.

Sent him out for beef tenderloin. None to be had, but he came home with some beautiful, albeit expensive, filet mignon. And fresh spinach.

So, I had my recipe all planned. Sear the steaks, then finish them off in the oven. Saute the spinach with garlic, sesame oil. Reheat some really good roasted potatoes.

So, I'm preheating the oven and *poof* - no more propane.

Arghh!!!!!

Plan B - get that grill going for the steaks, turn on the generator so i can use the microwave for the spinach.

It all came out great...

But, while we are enjoying it, the generator kicks out.

Arghh!!!

No more sources of heat - no propane, no generator.

OK, I am in southern California, but it's still cold enough to merit some heat.

Go to wash dishes - water pump pumping away but no water coming out!

This is how we live. When things stop working, it seems they all stop working.

Honey do list:

Get propane
Repair generator
Look into water problem (probably air in lines)

It's the least he can do for that fabulous makeshift dinner.

Same as Saturday, cause I had leftover filling and I only got one of the egg and sausage from the last batch. darn kids!
