Prosciutto omelette

Ingredients
4 slices prosciutto, diced
1/3 green pepper, chopped
1/3 red pepper chopped
1/3 orange pepper chopped
1/2 onion, chopped
1 cup mushrooms, sliced
1 cup shredded quatro formaggio
4 eggs, whipped

Directions
Is a medium size frying pan, heat the prosciutto until it's crispy, Remove and set aside. Heat a bit of olive oil and sauté the onions and mushrooms. Then add the peppers and soften them a bit. Add the eggs, cheese, and prosciutto and cook until the eggs are done. Voila!

A Top Chef got kicked off for doing that very thing. Regular bacon will serve you much better in this recipe.

It makes it nice and crispy. Plus I had a few slices that had been in the fridge for a while and I had to use it. I crisp it to put on pizza as well.
