eggs cooked in a muffin tray, sausage patties, cheese, and english muffins.

Mainly because the local store always puts the english muffins on sale as 'bogo' items, and we simply don't use them otherwise before they go moldy.

nice and light for hot weather. the upside to living in a garden level is that it's almost never too hot to cook.

Makes one understand the whole concept of siesta.

I cooked chicken last night from 10:30 to midnight. I can't even bear the thought of boiling water for my jamaica during the day.

the apartment we lived in during the summer from hell a years ago was a sauna, i don't know how i survived it. the only thing that got cooked that summer was my brain.

I have lived in very hot and humid climates, but I have always had ac.

I can't wait to get up to the mountains next week.

my hat and front seat in hell for ice cubes and a fan!

Oh, for Sunday dinner it was grilled turkey tenderloins, boiled red potatoes, slaw, cherry tomato/onion salad, lima beans. Kiddies had that and fruit platter (grapes, apples, oranges), macaroni & cheese, Oscar/Meyer tube protein.

i know the inside of my oven is a dry heat, but i simply cannot abide by humidity. it's impossible for me to breathe air that thick.

dinner sounds tasty, although i am not a fan of lima beans. i think i might like them more if i had them fresh.

and I may have spinach pizza...

I'm keeping fish in my diet but otherwise I am moving back towards vegetarianism again. I will probably do Ovo-Lacto (eggs and dairy) for a while and then reevaluate. Bill is a die-hard carnivore, but I was a full on veggie girl when we met, so we know how to make meals work for both of us.

unfortunately, mine has a horrible hotspot and just burns stuff if not regularly stirred. it's a circular one and as badly as i want an oval one, i just don't have room for one.

we don't eat much red meat anymore, we usually can't afford it, so it's chicken or pork (always bought on sale) when we do eat meat. we eat veggie a lot, not only because it's a bit more affordable, but also because husband's digestive tract likes it better. i'm not a horribly picky eater, so just about anything works for me.

It's a great way to cook enough meat to use for several main dishes - and easy cleanup too!

Mama nature needs to pick a season and go with it...the weather shifts are killing my joints!!!...but I am hanging in there...hope all is well with you!

They do help. So does honey and cinnamon. Never made tea with the turmeric though! Might try that too.

17. Oven fried chicken

Starting it in the cast iron skillet, then finishing it in the oven. With a mac salad I just made, and probably a cucumber/onion salad and simple vinaigrette.



ps: Got a cold call from Caltech on my cell, asking if I was interested in a "position". Will find out tomorrow what that 'position' is. Having worked for them before, I'm not that all impressed. But hey, it's a nibble on the line.

Fried chicken, yum.

I am driving from Puerto Vallarta, Mexico across the US border to Laredo, TX in may. One of the first things I did was to see where the closest Popeye's to the border is.

There are only a few things I miss, and fried chicken, particularly Popeye's, probably tops the list.

If I get that far. I'm so tired from cleaning and getting water out of the basement that I may skip it altogether and go to bed early.

That plus writing legal papers has me ready for a very quiet evening at best.

Fortunately everything is pre-made, so it will be easy if I do get hungry.

Yeah, at least 2, so as long as there's water in the ground, I'm going to get it, even if I am on the side of a mountain.

I'm going to have to move everything out of my basement and have it waterproofed.

22. Rao's Lemon Chicken Thighs

Salad with avocado dressing and some roast potatoes...

If you have never made or heard of Rao's Lemon Chicken ...Here's a link. I use chicken thighs. Its terrific warm or cold....If you have left overs it makes a killer chicken salad...but that probably won't happen.

I usually don't make as much sauce as this recipe calls for and it's still delish... Squeezing two cups of fresh lemon juice is too much...I also reduce the EVOO. It's a very forgiving recipe.

I also usually broil the chicken to get a good sear on it then pour the sauce over it and braise the chicken to finish in the oven. Then as the chicken rests, I de-fat the sauce and reduce....sometimes I add a pinch of butter but it depends on how fatty the sauce tastes.

And just as an info note: Rao's is a NY landmark restaurant that us "regular folks" can not get into. I'm not sure exactly how one gets a table there but
