This is so weird for me, because with our schedule, I'm just now about to have Tuesdays dinner, at 9 am on Wed.
and it will be a white spinach pizza with fresh herbs and an olive oil drizzle.

(28,501 posts)I'm in the early throws of a cold. I sound like I smoked a pack of cigs when I don't smoke at all, my ears feel like I'm deep sea diving as I type on my couch. I have a West African chicken soup recipe I like, uses lemon juice along with the chicken stock. A very good cold remedy!

(28,501 posts)Now whenever I eat any kind of chicken soup, it doesn't taste nearly as tasty unless I put some lemon juice in it.

(2,016 posts)That is, if I get off my lazy arse to get it started. I'm using a chuck roast, simmered for 3 hrs in beef stock, garlic, onions, cumin, and various chilis. Then at the very end I'll add diced tomatoes, pintos and kidney beans.
I'm going to use a bunch of different chilis and chili powders:
Fresh:
Jalapeno
serrano
Canned (added at the end):
sweet diced green chilis
chipotle w/ adobo sauce
Dried & ground:
New Mexico
cayenne
guajillo
ancho
Oh yeah. And lots of bread to cool the fire!

(6,057 posts).... with roasted asparagus and a small dab of nuked Bob Evans sour cream and chives mashers.
It was so good..... I'm going to have it a second day in a row with some modifications.
I'm going to add fresh mushrooms and some crushed garlic to the asparagus.... and dribble with lemon juice after baking.
And I'm going to add a little Dejon mustard to the mayo and chip coating on the cod. I'm also going to sprinkle finely cut scallions on the fish and mashers.

(35,730 posts)Some good eatin' going on upthread! The cod sounds de-lish and the chili sounds interesting, what with all the different chili peppers.
I'm making a big tossed salad with croutons and a couple different kinds of greens. I think I'll add hardboiled egg, cukes, green pepper, and maybe some sundried tomatoes.
Then refried beans on tostadas. On top of that is the avocado-tomato combo the RG made. On top of that is some Mexican crema and chopped red onion and cilantro. Should be great. I should run down and get some Corona to go with.
Now, dessert. Prob'ly fresh fruit if there's room. I'm thinking grilled pineapple basted with hazelnut liquere, but I might not have the energy. If I conk out, a relative who loves baking sent us some chocolate chip cookies. That and a glass of milk should be the perfect end to a rainy day.

(50,130 posts)I bought some parchment bags for oven cooking. Stuck the salmon steaks in the bag with some onion, parsley, dill, lemon slices, S&P.
Served with sweet potatoes Anna, petite peas (so easy to cook from freezer).
Pineapple upside down cake for those who can do the carbs.

(8,646 posts)I was a bit sad when I realized I only had 1 onion though. I love loading my soups up with onions. I just added a lot more of the other vegetables. It turned out good though - I got to clean out my freezer and the broth turned out very rich, which doesn't usually happen for me. I also realized I had no noodles (d'oh!) so I made some. yum. Love fresh noodles.
