It's too hot to boil the chicken, so will do that tonight when it cools down.

So, a think a salad with apples, goat cheese and candied walnuts. Making a jamaica vinaigrette now.

And perhaps some simple quesadillas on the side.

Stocked up today and locking forward to some cooking adventures this week.

They call it Jamaica (Ha-my-ee-ca).

I make a concentrate and then a beverage from it which I drink every day. It's very thirst quenching and healthy. It's one of the more common "aguas frescas" which you see everywhere.

So I'm using the jamaica for a salad dressing. Have been rehydrating the flowers in oil and vinegar with some sugar, salt and pepper and about to blend it all up. It's unique and absolutely delicious.

The locals say the jamaica is particularly good for the kidneys and "lady parts". All I know is that it is delicious and perfect on a hot day.

Do you have to add the sugar? I'm always looking for a new drink, but they have to be without sugar.

Wonder if I could get it here if I asked at my local Hispanic market. Or maybe one of my students would know.

In any event, it sounds delicious. The things we are learning from you!!

I had never noticed it in markets in the US, but it's so popular here that I bet it was there all along.

Cod is sitting in some lemon juice and black pepper for now. It'll be a quick bake. Curried mayo for the asparagus, raspberry vinaigrette for the cabbage.

Cold and rainy Mardi Gras, hard on Rex and Zulu queens and kings, marching bands, beautiful costumes, and children trying to catch the trinkets. But we've been warmed up by some of the best steak ever, onion rings, spinach augratin, salad, and scrumptious NOLA bread pudding. It's all good in New Orleans!

and my kitchen is too messy to cook in, so I went to a sushi restaurant and also a seafood restaurant and got take-out sushi and seafood croquettes and some large shrimp.

It was good, but it wasn't that filling so I was happy when a friend offered to make some pasta. I recommended we use my sauce, which I'd made earlier in the day:

roasted tomatoes with garlic and basil. Put in blender and add some cream, salt, and olive oil. Pinch of sugar. Fabulous roasted tomato sauce and so easy.

I roasted a bunch of vegetables. Then added them to some tomato sauce and red wine. Pureed it and served it over pasta.
