congee

had some left over chicken soup.
added some soy sauce and ginger. tossed in some rice and going to let cook for an hour to make congee for breakfast tomorrow

(congee is a chinese rice porridge)

heres the recipe im using

8 cups or so of chicken broth
3 tbsp soy sauce
2 tbsp ginger
1 1/2 cups rice

bring to a boil,reduce heat and simmer 1 hour or so

ill know in an hour how it tastes

I bought a wok last year and a bunch of Asian cookbooks. One of them has a whole section devoted to Congee. I just havn't gone there yet.

Congee is the breakfast of Chinese champions but it's also comfort food when you have a cold. My throat's getting a little scratchy so I might follow your example, putting the ingredients into my slow cooker before bed tonight. When it's for a cold I generally throw in a little cayenne pepper to reduce throat pain and clear the sinuses better.

used 8 cups instead of the 6 i started with
i also tossed a handful of frozen peas into it

as montgomery burns would say.... exxxxxcellent

canned cream of celery soup.
chicken broth.
left over cooked rice.
Cooked chicken pieces.
Frozen peas.
Few slices of canned jalapenos.
Seasoning: curry, chili powder

Simmered all together



Toast and crackers

cold white wine

Yum. very full tummy this cold nite

My Instapot has a Congee setting and it comes out perfect every time.

I like mine with a hit of spice so I usually add a thai chili or jalapeno to the mix. I usually add some chopped fresh spinach at the end too.

I'm just coming off my kitchen remodel and have lived out of my Instapot for the last six weeks...It is by far my favorite small electrical appliance and even noses out my vitamix ..

I can't wait to hear how much you love it.

Just make sure you fill it with water and soap immediately after using it as it isn't non stick. Honestly though I have found it a breeze to clean and I don't have no worry about that coating flaking off.

My only complaint about the pot is that it is a challenge to get the insert out of the cooker when it is hot...but that's not a good enough reason to not get one.
