Luscious Lamb Curry

Ingredients
1 1/2 pound leg of lamb, chopped into bite-size pieces and fat removed
1 large onion, chopped
1 small bag frozen peas
1/2 head cauliflower (or one small bag frozen), cut into small pieces
2 T tomato paste
2 cups grape tomatoes, cut in half (or 2 whole tomatoes, chopped)
2 cloves garlic, minced
2 small containers plain yogurt

Garum Masala Spice mixture
1/2 t black pepper
1 t turmeric
1 t ground ginger
1 t paprika
1 t cardamom
1 T cumin
1/2 t cayenne pepper or more depending on how hot you like it (optional)

Directions
Combine spice mixture and set aside. In a large pan, heat olive oil and quickly sauté lamb pieces for just a few minutes. Remove. In the same pan, cook onions and garlic until translucent. Add the spice mixture and cook for a minute or two. Turn down heat to low and add yogurt, tomatoes, and tomato paste. Fold in lamb, add 2 cups water and simmer for an hour to an hour and a half covered. Add water if necessary. A couple minutes before serving, add peas and cauliflower and heat through. Serve over Basmati rice.

Lamb is probably my favorite meat and I am accustomed to using it ground to make meat balls for lamb stews,
and also use the stew cuts or roasts in various dishes. Someone recently invited me to feast on a super thick lamb 'steak' which was so tender it literally melted in my mouth ( good to have some fanatical foody friends). Mostly I use Turkish/Moroccan spices but haven't made a really good curry version yet so this will be the one! Thanks!
