I also bought a whole chicken to put in my slow cooker to make more chicken tinga. Wow, was that ever good. I used the recipe at Pati's Mexican Table web site.

I had about 8 poblanos that I broiled and then took the skins off. I then dusted them in flour, egged them, and then dipped in panko and gave them a nice brown exterior using my cast iron skillet.

In some cases I stuffed the poblano and in cases where my poblano fell apart, it just formed a nice double layer of pepper on which I could put a spoonful of chicken tinga.

I then topped it with sour cream and Monterey Jack cheese.

Totally out of this world!

One thing I'll do next time, though, is make the chicken tinga in advance. It was too much work to make on a week night. I didn't get finished until midnight and everyone had gone to bed!

My dad makes this killer garlic dip and always has like 5 kinds of wings. yum!

I finally found an alfredo sauce recipe that's to die for! Can't wait...

At a memorial get-together for my brother-in-law's poker buddy who died recently. A group of 6 played at someone's house every week. I didn't know him well but worked with his wife, she in County Mental Health and I in County Public Health. We crossed paths often. Small town, most folks have multiple workplace, social person and political cross connections. They both were always at my sister's house parties.

Anyway, he was a wine salesman and had worked with some of the best restaurants in the area for years. They got together to put out a buffet sampling of his favorite bites. Italian meatballs, jambalaya, hummus, smoked baby pork ribs, sausages, fresh greens, local olives, baklava, sliced fresh fruits, brownies, peanut butter cookies, wines, iced tea, lemonade, espresso.
