Spinach mushroom Asian noodle soup

Ingredients
6 T Miso paste
2 t dashi powder
1 shaved carrot
1/2 bag baby spinach, chopped
1/2 pound mushrooms, sliced
6 coffee mugs water
1 large onion chopped
1 handfull dried and shaved nori
1/4 pound Udon noodles, cooked according to directions
2 green onions, minced
Reduced sodium soy sauce

Directions
Saute mushrooms in a frying pan with a bit of olive oil until browned. Set aside and caramelize onions in the same pan. In a large pot, bring water to a boil. Add miso, dashi, and nori and a dash of soy. Lower heat and simmer for 10 minutes. Add mushrooms, onions, and carrots and cook for 10 minutes. Cook udon noodles and set aside. Just before serving, add spinach, cook for a minute or two, add noodles and serve with green onions.
