1. Ribeye steak sandwich on ciabatta bun with grilled onions and Swiss cheese.

2. Not sure what for dinner but making my folks

Some creamy spinach soup for lunch.

3. Creamy poblano soup. Going to let DH pick the sandwich.

We can have cheese/tomato quesadillas, BLT's or hot dogs.

Not going to ask him yet, as he gets all wigged out when I start talking about dinner before lunch, lol.

He's typical sick male, but not too demanding.

He has chosen the BLT option, which is fine with me.

And dinner at lunch....he needs to know we are not going to let him starve to death.

7. Homemade pizza...I need a good crust recipe!

I'm sick of cooking.

If anyone has a killer thin pizza crust recipe, please post! All of the ones I've tried so far taste like cardboard and are too crispy. I like them thin but with a little chew to it...and some flavor.

12. I use pita bread

quick and crunchy. Some Classico marinara, Mozz(the good stuff) and pepperoni.

8. Soup

The one I'm making tonight is called "Seven-Bean Melange." Has navy, cranberry, Great White Northerns, garbanzos and also some peas like black-eyed peas and red lentils. I got the recipe from The Soupbox Cookbook.

Chopped salad with honey-mustard dressing.

9. Pork roast and potatoes au gratin.

I made the potatoes with Swiss cheese.

11. chicken burritos

Shredded chicken, rice, beans and roasted taters. Husband will roll a few burritos, I'll just slop it in a bowl.

13. Chili verde

with turkey (Thanksgiving leftovers: we froze a lot of meal-sized packages of meat), white beans, tomatillos and Anaheim peppers.

14. Tuna salad sangwich with home fries

Malt vinegar on the fries, of course.

15. Had scrambled eggs, refried beans, red salsa, cilantro on a tortilla. Avocado and lime.

Putting together a big ham, lentil, onion, carrot, celery, garlic, kale soup to simmer and quart up for later. I'm hammed out right now, but down the road...it's going to be good.
