I hope you all had a wonderful day yesterday.
I am beyond tired, but we had a great visit with our neighbor, and are looking forward to our company coming into town later tonight.
Today will be leftovers for us. Nothing exciting... but delicious!

We are having sliders with an avocado mayonnaise and fresh cheese. I'm also going to make sweet potato rounds roasted with chili powder.
The tres leches gelatin dessert I made yesterday was really good, albeit different. I have some left, so there is our dessert.
Happy boxing day, everyone! Eat some leftovers for me (I like a turkey sandwich with dressing and a side of mashed potatoes and gravy, thank you very much!).

The whole thing didn't quite get sliced for some reason. so I froze the bone with the ham that is still attached and will make my split pea soup with that in a month or so.
Besides that I have the rest (~5#) that I need to do some other things. We've already eaten leftovers twice plus sandwiches.
What else I'm thinking is a batch of scalloped potatoes and ham.. I wish I had my Aunt's recipe, but sorry to say she never wrote it down and she is no longer with us. I have tried many different ones, but I just can't seem to get it quite right. It was a very simple recipe with no spices other than S&P I'm sure. Just pared sliced spuds, onion and ham, and I don't know if she put dotted butter between layers and then milk or cream poured over it, or what.

(9,272 posts)Put it thru the food processor with celery and sweet pickles, mix with mayo. Yum.
I also have the bone with loads of meat attached which will become ham & bean soup next week.

I happened to be picking up a prescription at my supermarket pharmacy and I wandered over to the poultry section and found this turkey breast marked down. It was still in its "sell by" time period, though. Anyway, was $17-something and I got it for $6!
Yippee, I love a bargain.
I got the idea to check from someone else on this board who also scored on some turkey after a holiday. Can't remember who it was, but thank you, fellow poster.

But today I'm looking for something from a professional chef, not my kitchen.

(9,272 posts)Dinner for 12 yesterday was a big spiral ham, hash brown casserole, green bean casserole, mixed veggies, coleslaw, cherry cheesecake and of course cookies, candy, etc. Resting up today, tomorrow starting prep for our big holiday friends party on Sunday.
