What's for Dinner ~ Tuesday ~ December 24th ~ Christmas Eve Edition

We have company coming tomorrow, so we are taking the easy way out today while we do a few things in advance like making truffles...
that means it's deli sandwiches or maybe a pizza for us today.

It's basically pea soup with sauerkraut and wild mushrooms, cooked for a long time until it thickens. A meal in itself.

It does sound odd, but it is so tasty. I made the pea soup from scratch and it was great. The kielbasa aded a lot of flavor too!

8. Prepping for big meal tomorrow

Christmas Eve is always low-key here as DH and I are both (pretty good amateur) musicians and play at various church services tonight, plus I am serving communion at our church at the 3:00. Tomorrow we have a house full and I'm making a big spiral ham and lots of side dishes. Just finished desserts now (cherry cheesecake and pecan pie) and the cookies, fudge and Chex mix are long done. Sad--first Christmas without Mom. But happy too--next Christmas there will be 2 grandkids!

I picked some up this afternoon. Carne and dulce. Really good, but I've never made them myself.

black bean, mild green chile and cojito cheese. Now he knows how to make them himself--but will probably use banana leaf and polenta, which are both available down under, unlike corn husks and masa.

Stuffed squash with maple syrup and butter. Tomato chewies (cherry tomatoes). Variety of of rolls, also warmed in the slow oven.

Fruit, too. Roasted some plums and served them with vanilla yogurt. I made plum syrup with agave. So simple, but so good.
