Used to see (and buy) chunks of it at grocery, then discovered Russell Stover sugar free dark chocolate + raspberry miniatures, and those (+ Nutella) are always with me!!!

Last year around this time I bought two 2 lb. slabs of Merckens 51% bittersweet, one 1-lb. slab of Merckens milk chocolate, and one 1-lb. slab of Merckens white chocolate with the intent of making truffles. I never did, either last Christmas or when my GF was here last Spring. There's still one pound of the bittersweet left

She kept it sealed in a tub in her cold basement, slicing it off for chocolate emergencies, hot cocoa and desserts.

If it had been dark chocolate, I could have used it for baking, but I don't believe that milk chocolate lends itself well for things like cakes or brownies. (And don't you milk chocolate fans tell me different: You're wrong.)

I found that a 3-ounce milk chocolate bar is a treat, a ten pound bar is a burden. I wound up breaking it into pieces and giving it to my friends.

I'm sure you could probably make a ganache with it (for truffle centers) though that's usually made with dark chocolate.

And most friends tend to love chocolate gifts
