I made this today for lunch, and am having an early dinner of it too! It's really good, turned out much more tasty than I expected. Next time I make it, I'll use 5-6 cups of kale rather than 8. It's so good for you, and fat-free!

Love kale. Also love the option of adding quinoa with the veggie broth for a complete protein feast.
