1. I found porterhouse steaks on sale for $5.99/lb. I got 2 beautiful 1-1/2 lb steaks...

Japanese cucumber salad for the next two nights and then cold sliced steak
with cold baked beans and coleslaw (a little picnic al fresco) on Wednesday.

13. Take a cucumber (or 2 or more), peeled (optional) -- and slice it in half lengthwise.

Then slice it very thin into half-moons. Marinate in rice wine vinegar with a pinch
or two of sugar. Serve chilled.

I was going to have this for breakfast, but decided to have healthy groats and honey instead. Meh!

I'm going to make some peach salsa too. It's best when it sits overnight in the frig (letting the flavors blend).

Since I was so tired after I made it last night, I fell asleep! I only had "to taste" sips.

and p.s. my teaching schedule this year has me working M-F, pretty much 11-4. It's almost like working 9-5. Very hard to get anything done. So I sympathize with all the f-t workers on this thread. Don't know how people work F-T and then come home and cook for a family.

and I think I will bake a potato and stuff it with all the yummy things I love.

I have to get back to cooking for two either tomorrow or Thursday, so times running out for just eating what and when I want, lol.
