Then slice it very thin into half-moons. Marinate in rice wine vinegar with a pinch
or two of sugar. Serve chilled.

I'm going to make some peach salsa too. It's best when it sits overnight in the frig (letting the flavors blend).

and p.s. my teaching schedule this year has me working M-F, pretty much 11-4. It's almost like working 9-5. Very hard to get anything done. So I sympathize with all the f-t workers on this thread. Don't know how people work F-T and then come home and cook for a family.
