yard long beans

i grew a lot of varieties of beans this year, and i think my fave was maroon yard long beans. they have a slightly more bitter flavor than most green beans, which i think is fine. they stay purple/maroon after cooking.
but the big thing is- they save a ton of time both picking and prepping. this will be my go to snap bean, i think.

My favorite way to do them is Sichuan dry-fried beans, a decent recipe here: http://www.seriouseats.com/recipes/2011/01/sichuan-dry-fried-green-beans-recipe.html

The preserved veg is easy to find in any Asian market and it keeps very well in an old mayo jar in the fridge. The hot pepper paste it's preserved in discourages most uglies.
