Forgetting the salt in a yeast bread will make it very large and fluffy. But tasteless. The salt actually inhibits the yeast, but is very important for flavor.

My 'lab' partner in Baking class told me she put the salt in the batch of dinner rolls, but hadn't. They were large and light, but tasted like crap. Embarrassing.
