Homemade apple sauce

Ingredients
10-12 apples (depending on the size and how much you want to make.) Peeled and cored.
1/2 c sugar
Water, depending on how moist the apples are
Cinnamon

Directions
Peel and core the apples. In a large pot, cook the apples over medium heat until they get mushy and fall apart. Add sugar and if the sauce looks dry, add some water. Cook for an additional minute or two. Off heat, mash and add cinnamon. Let cool and serve with additional cinnamon.

If you have a food mill, you can simply quarter the apples, peel and all, and I like to cut out the centers and seeds. Fill large pot with them and add a quarter cup of water. Cook on low until soft, then when cool enough, put through the food mill.

Or you can pulse in a food processor for a chunky style applesauce. It has a little peel in it.

You can often get away with not adding any sugar. For a potful of cut apples, I'd only add 1/4 cup, but that's my taste. A little lemon juice can be nice, especially if the apples are not tart. Cinnamon would be about 1/2 tsp. per potful.

I have apple trees, so am busy this time of year! I like to freeze sauce in 1 pt. plastic containers. Use it all year in baking and for eating.

You can just peel and core apples, cut into chunks, and put them in a covered container in the microwave. Once soft, you can mash them. If you add a little lemon juice, it will keep them a nice color and add a little tartness. No sugar necessary; I usually do add some cinnamon and/or ginger though.

To get the seeds and core out of an apple, cut it in half and use a melon baller to scoop out the seeds. It's also sturdy and sharp enough to peel off the fibrous part from the stem and blossom ends.

My Stepmom uses a crock pot to make apple sauce. She sometimes will 'keep going' and make apple butter. Home made apple butter is one of the fondest memories of childhood visits to my Grandparents' farm.

I don't peel the apples. Most of the fiber is in the peel. I just use an immersion blender when they are done cooking which chops up the peel just fine and adds a bit of texture that you don't get with commercial applesauce.
