4. How do you make your breaded zucchini?

I ask DH to bring home a cucumber yesterday and he came home with a zucchini.

I'm not a big fan of the zucchini and am unsure what I might do with it.

Slice zucchini into 1/4 " rounds. Dredge in a flour-salt-pepper mix. Dip into an egg wash and then into cracker meal, or bread crumbs. Heat some cooking oil and fry the zucchini on both sides til golden brown. Drain on paper towels. Serve hot.

Asked for a cuke, got a zuke!

May I vouch for LTH's recipe? I made them a couple nights ago. The only diff in my recipe is that I sprinkled in parmesan and fresh chopped herbs in the breading mix. I use panko.

They are so delicious. You will be a real fan once you've made these zucchini rounds!

Also, my spouse likes to mix in thin onion slices while they are frying in the pan.

Another thought, but you prob'ly won't be able to do it, being on a boat 'n all: they are good with horseradish/sour cream/mayo sauce.

Now I wish I had another couple zukes.

It needs some salt either way, so dressing or sausage juice would work.

So I am going to roast some potatoes and put some raw zucchini it.

I showed DH your post and he still tagged them wrong.

Then he just shrugged.
