what's for dinner - sunday, sept. 15

cbayer put the idea of chili and corn bread in my brain a few days ago and the relentless rain has returned, so that's what's on the menu for tonight. forgot to grab a jalapeno for the corn bread and i'm a bit bummed, but there is no way i'm heading out to the store today.

Probably going to splurge on a BLT with fries. But for breakfast, we just finished some omelettes I made with ham, cheese and some wild chanterelles I foraged last weekend.. yummy!

Homemade Carrot - Apple - Ginger. I will also probably make a kale salad and maybe a light sandwich at some point...

Cornbread and chili sounds wonderful!

I hate cleaning mine, but it is really worth it. It's a great way to get a ton of nutrition in when I don't feel like eating. Endless flavor combos too!

7. Creamy Avocado Pasta

Had some tomatoes and avocados that were ripe and figured I could use them both in a pasta. Found this recipe on-line. Kind of like guacamole pasta - and who doesn't like guacamole!

CREAMY AVOCADO PASTA RECIPE
makes 4 servings
recipe adapted from Oh She Glows
notes: add some grilled prawns or chicken for protein.

prep time: 10 minutes
cook time:1 hour 10 minutes

INGREDIENTS
10 - 12 small Campari tomatoes, quartered
3 - 4 tbsp olive oil
4 servings of fettuccine noodles
2 ripe avocados, seed and skin removed
2 garlic cloves, peeled
1/2 tsp salt
2 tbsp lemon juice
1/4 cup pine nuts
grated fresh Parmesan cheese
salt and cracked black pepper to taste

Preheat oven to 300 ºF.

Wash and quarter the tomatoes. Place on a baking sheet lined with parchment paper. Drizzle with 1 - 2 tbsp olive oil, just enough to make the tomatoes glisten. Bake for 1 hour in the oven.

Ten minutes before tomatoes are finished, fill a large pot with water and a sprinkle of salt. Bring to a rapid boil. Add the dry fettuccine to the water and cook until al dente.

While the pasta is boiling, add 2 tbsp olive oil, avocado, garlic, salt and lemon juice to a food processor. Pulse until the ingredients are smooth and creamy.

Strain the pasta, and combine with the sauce in a large bowl, until all the pasta has been covered.

Add the roasted tomatoes, sprinkle with Parmesan cheese and pine nuts. Add some salt and black pepper to taste.

I ran out of propane a little too soon for the cornbread, but we just enjoyed it extra moist.

I'm going to make a meatloaf and mashed potatoes. We are totally fogged in here, which is really nice (since we are not going to move anywhere today).

i think i've made meatloaf once in my life, it's just not something we eat. maybe i'll try my hand at it sometime soon.

i made a loaf of cinnamon swirl bread, had to run out while it was in the oven and my husband pulled it out without checking it. we've been enjoying it extra moist too

It also calls for cooking it on a cookie sheet instead of in a loaf pan.

We shall see.

Hot dog on toasted bun, Dijon and relish. Baked beans. Potato salad. Cole slaw. Watermelon.

SF Giants & LA Dodgers on now. Then it's the BoSox and the NY Evil Empire.

I'm thinking of buying the mbltv feed for the post season.

I think it's either $20 or $30 and we could pick it up anywhere we get internet, including Mexico!

Needed a way to get rid of some kinda stale burger buns. And with sloppy joes, staleness doesn't matter cuz they'll soak up all that goodness.

That's what I made yesterday and have been enjoying today!!

These rainy days (I'm in S. Denver) are perfect for chili.

Sounds like you're doing ok a bit north of me. Hope that's still the case.
