INGREDIENTS
6 tablespoons olive oil
2 lemons, 1 thinly sliced, 1 juiced
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 pound trimmed green beans
8 small red potatoes, quartered
4 chicken breasts (bones left in, with skin, about 3 1/4 pounds)
DIRECTIONS
Preheat oven to 400°F. Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet.
In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the green beans and toss to coat. Using a slotted spoon or tongs, remove the green beans and arrange them on top of the lemon slices. Add the potatoes to the same olive-oil mixture and toss to coat. Using a slotted spoon or tongs, arrange the potatoes along the inside edge of the dish or skillet on top of the green beans. Place the chicken in the same bowl with the olive-oil mixture and coat thoroughly. Place the chicken, skin-side up, in the dish or skillet. Pour any of the remaining olive-oil mixture over the chicken.
Roast for 50 minutes. Remove the chicken from the dish or skillet. Place the beans and potatoes back in oven for 10 minutes more or until the potatoes are tender. Place a chicken breast on each of 4 serving plates; divide the green beans and potatoes equally. Serve warm.

Haven't tried this, just saw it, but sounds like 'me.' Think I'd use skinned + boned chicken thighs, tho.

(130,974 posts)Might par-boil beans + bake them according to LAST part of recipe, and might also par-boil potatoes and see to it that they get some good brown/crisp color in the process, at the end in particular. Much prefer browned potatoes to boiled or stewed style.
I'm absolutely with you re: lemon!

(42,770 posts)Think I need to study up on the types of potatoes (water content) because even when I peel and bake w/olive oil, sometimes
they brown, sometimes not.
Found an easy and good way to prepare potatoes - You microwave them til almost done. Then, slice into wedges,
drizzle with olive oil, and bake for a bit and broil for a bit til brown. The skins crisp up and are delicious. Maybe throw in a couple whole garlic in skin to roast.
Good finishes: Squeeze of lemon...Grated Parmesan.

I only use red potatoes, and hope the ones I just bought are tasty! And I never peel them! See, I'm SIMPLE!

(130,974 posts)Now in Maryland suburb(s,) and have just leased this place as another 'option,' so will have 3 residences!
The cottage is closer to my daughter than the others, AS WELL AS being in such a lovely spot! Hard to believe, isn't it?? Will be available for 'move-in' in couple weeks, owner wants to have some interior painting etc. stuff done, but I MAY go over to check it out, determine what furniture I'll need to move into it, and bring my toothbrush, this weekend!
Hope to get a decent camera that will allow me to take better pics, and become a real show-off, pain in the butt here! Craigslist pics were taken by tenant who is in the process of moving out, and my little cell phone 'camera' doesn't do it justice AND doesn't allow me to post here (or anywhere, but in text-messages.) Have already taken a pic from window @ the kitchen sink! Imagine that! 'Kitchen sink with a view!'
Inviting 'nearby' DUers to visit and party WHENEVER! Where are you???

(42,770 posts)I am so jealous. I am from blue state Ct and went to college in PA. Worked in DC, Boston, and Nola. But, fell in love with a Texan and until he retires, stuck here. We are flipping houses on the side and hope when we get up to 10 he can retire.
We are very fortunate and lucky in life.
The thought of living near water, but not far from a major city, would be a dream come true.
Can not wait to hear about the wonderful and creative cuisine you come up with from that kitchen with a view.

(130,974 posts)Never was a creative chef, but family day to day cook. Daughters have asked for 'old' recipes, that much I'll say. IF I do anything creative, would likely be for visitors! (DO have a great guacamole, but you probably don't want to hear about that, in Texas!)
Very happy to hear you're living happily with your Texan, and thinking of a retirement future. Keep Maryland in mind, if only for a visit! Lots of water around, and a big city or 2!!!

(130,974 posts)I think owner told me its about 100 years old. He and his family have owned the property for some time, 60 acres I think, corn growing on much of it. Has been rented to current tenants for 9 years. (I should say former tenants, as they were supposed to be out today!) Owner lived in it before that; has 16-year-old triplets, and they lived in it for 5 years, then moved a 'big' house onto the property from elsewhere nearby and have lived there (and in DC,) since.

(10,291 posts)just building/reno parts, so they rented from someone for like three or four years. (Or I am probably getting that wrong because I was "Little" and I was born in a hospital in Baltimore, but they had to leave Lusby to get there, lol.)
I remember the waterfront being stoney like that, and that we would pick blackberries and blueberries and raspberries off the fences along a tree lined pathway/dirt road. The owners would let you have the ones that were growing on the outside of the fence.
And stingrays.
And this spongey, multicolored cake that was all the rage at the time. It's funny how food comes in and out of vogue.

(130,974 posts)Only been there twice, and briefly, so don't recall seeing fences, but tree-lined dirt road certainly still there! Went to tire shop today & got 2 new tires for my '93 Camry, so I'm sufficiently mobile!
And I think I recall seeing something recently about such a cake, on a show about Maryland, on local Maryland PBS! Yes funny about food, but THAT cake is STILL in vogue, but in VERY limited area!
Southern Maryland Photography, which is in Lusby and takes beautiful pics (on FB, fyi,) just posted a jelly fish; no stingrays yet!

(130,974 posts)and with friend in Silver Spring, Chris VanHollen, and in Hagerstown, John Delaney, for whom we fought in November! Maryland's a good place!
Once I get there and get a camera, will provide better pics!

(130,974 posts)about 70 miles away, with a friend. Also have a small apartment in Hagerstown, MD. That's about 130 miles from Lusby. Will stay for some amount of time in all 3 places, and the amount of time is QUITE uncertain! Do have to pick up mail in Hagerstown every month at least, and when weather is bad, like snow in Lusby, will probably be in Silver Spring, as dirt road to cottage won't be cleared of snow.
Estranged husband passed on, May 15, and as I'm in charge of estate (along with lawyer,) I have to be close to DC, to pick up husb's mail and arrange for things in his apartment to be disbursed (among me, daughters, and charitable organizations,) and finally end his lease. REALLY want to be done with that SOON, but its a 2-bedroom apartment full of stuff, including much from our home (which I left in 2006, and which he sold in 2008,) so its a real project. Visiting cottage this weekend to decide what of husb's furniture I want, so can start on list for daughters: I'm taking this, you and you want what, and how do we accomplish all of this, 1 mover, 2 movers, 3 movers, Goodwill???
One daughter lives about 30 miles from Lusby (which is why I looked for a place in Southern Maryland,) and hope to see her AND to receive help from her! (Other daughter, expecting baby in December, in NJ near Philly.)
ANYWAY, expect to spend some nights there after painting + work landlord wants to have done is accomplished, in a couple of weeks!

(130,974 posts)Funny, kind of, that I'll be there kind of resurrecting a 'home.' Was first in rooming house, immediately after break up, which lasted and became very acrimonious, and tho good friend has provided nice home in town-house, and my apartment is comfortable with pleasant surroundings, finding the cottage feels like a potential HOME. And both daughters, who don't speak to eachother, are excited. That's one reason I'm thinking of getting back into cooking. Did it day to day when they were growing up, of course (and me and husb both working full time,)
SO, HAPPY to retrieve 'artifacts' from our house which really was a home! Husb's kitchen contains LOTS of my/our stuff. Found my FAVORITE cutting board!!!

(2,953 posts)And because I have no green beans, I am using frozen butter beans. We'll see how it turn out. It smells good. I am using lemons from a nephew's tree. Fresh from California.

(22,380 posts)Everybody liked it. The chicken was juicy and delicious, I put it under the broiler for about 5 min. at the end, baked the whole dish at 375 for an hour, basted it again with the butter/EVO mixture before broiling.
The vegetables were good, the potatoes perfect and brown, and the lemon was a great touch.
