2. Need some help for BBQ chicken.

A friend is giving me some chicken thighs in exchange for cooking his dinner.

I'm in the mood for BBQ chicken, but my punky little, completely falling apart grill is just the wrong tool. The grate is too close to the flame and when I have tried to use it for chicken, I just get a burned outside, raw inside pile of mess.

I've got a good sauce on hand. This is what I love about BBQ chicken - the crispy skin, the messy sauce and the moist inside.

How shall I cook it?

Or let the coals in your grill burn down some, brown the thighs, baste, then cover tight and cook slow? Solidly overcast up here, how about down there?

And my grill is propane and can't be turned down low enough for chicken. Every time I have tried, it has been a disaster.

I guess a could bake, then finish with the broiler a few pieces at a time.

Very overcast down here. It was downright cold last night.

I found a recipe that calls for baking them for about 30 minutes, then pouring off the grease and slathering on the sauce.

If the skin is not crispy enough, I can then put them under the broiler or maybe even on the grill for a few minutes. Without all that grease, my grill might not flame up.

used to do. The other thing is to put the chicken on the grill and cook it before putting on the BBQ sauce. Put that on after the chicken is just about ready and you can still get the good crispy skin and brown stuff on the outside with the sauce

and made an excellent dish using TJ's peanut sauce and coconut rice.

Will try this next time, though.

Store bought sauce from Boulder CO, basically a ginger/garlic/tomato sauce. Tumeric & paprika in the mix. Might kick it up a notch. Chunks of chicken, yellow squash, bell peppers. Over basmati rice. Yogurt with sliced cucumber & mint on the side.

opened the sinuses as is, out of the jar. Nice tang. Only changes I made were to split the basmati rice boil to 50/50 water and coconut milk, add sliced veggies to the simmer. With the rice it made enough for another meal tomorrow (I used a 1/4 broiled chicken cut up).

In the group that's having chicken tonight.

I'm making Chinese.

The main dish is Spicy Peanut Chicken with Bok Choy.

Brown rice, of course.

In addition, I am making slaw with red cabbage and mandarin oranges.

Honey they shouldn't be eaten in a month without an R in it. Too hot, for ones, devastates textures for two, and can turn toxic if eaten raw (which is how I always eat them).

Pot roast, white corn on the cob, fried zucchini, and buttermilk biscuits with homemade strawberry jam. For dessert, I made a cherry clafouti, but no one had room for it, so it will be breakfast tomorrow. The beef, corn, zucchini, and cherries were all from the farmers market.

mexican food tonight. i had a tamale and a cheese enchilada, but i'm not feeling that hot and only got through about half my tasty dinner. i did finish the margarita though
