my husband has friends coming into town tonight and it's the second-to-last night my best friend will be in town, so we'll likely go out.

because I have none since I'm from New Orleans and we all know what to eat on a Monday.

Red Beans and Rice

1 lb dry small red beans
1 tsp. Baking Soda
1 1/2 of sausage, perferrably any fine selection of spicy Creole sausage
4 cups water
4 or 5 cloves garlic, minced to taste
1 large onion, chopped
1 1/2 cups chopped celery
1 Tbsp Worcestershire sauce
2 teaspoons of Cajun or Creole seasoning (Tony Chachere's or Zatarains) or to taste*
Tabasco sauce
1 deseeded Creole tomato
Salt and pepper to taste
Cooked White rice - enough to serve it over

Place dried beans in a large bowl and cover them with cold water by a couple of inches. Add a tsp. of Baking Soda to make them more amenable to cooking (and make them not gassy when you eat them). Let soak for 8 hours or overnight. (You can quick soak them by putting them in a bowl and pouring boiling water over them, covering them by 2 inches, then letting them soak for two hours.) Drain.

Place beans, sausage, garlic, chopped onion, and water in a large (8-quart) pot and bring to a boil. Reduce to a simmer and cover, simmer for 1 1/2 hours or until beans are tender.

Add the celery, chopped deseeded tomato, Worcestershire and seasonings. Cover and cook for another hour or until the mixture gets thick. Season to taste with Tabasco sauce, salt and pepper.

Serve over rice.

And serve with your choice of cornbread or buttermilk biscuits. That's how it's done on a Monday!

by with 6 disks or so arranged on top of each serving..

4. vegetable grilling

I'm going to grill 6 lbs of peppers and about six large onions. An eggplant. Four or five tomatoes. A couple mushrooms. Then use this for the next week for sandwiches, salads, etc.

So tonight I will be using these vegetables for something--probably a pasta dish with grilled vegetables.

On edit: I wanted to tell about my steak grill the other night. It turned out well, even though I am somewhat of a novice at using a real charcoal grill rather than a gas propane grill.

The winner was the steak rub recipe. This is it, and it comes highly recommended!

I eliminated the first two ingredients and quadrupled the amount, as I was fixing at least a dozen small steaks. It was still fantastic.

Big Bold Steak Spice Mix
from Lampe BBQ E-book


3 T salt
1 T onion powder
1 T finely ground black pepper
1 t smoked paprika
1 t coriander
1 t chili powder
1 t Sugar in the Raw
1/2 t dry mustard

Mix together and keep in airtight container.

Felt unwell last night and haven't eaten much today. Didn't feel like cooking. I feel much better today, though tired.

After a potluck yesterday, we were given some leftovers of pasta that I really disliked. It tasted like it was boiled in campbells tomato soup, with no other seasoning.

I added some chopped ham, shredded mozzarella, hot sauce, black pepper, and fresh herbs from the garden and am baking it in the oven now - hoping to make it into something I like a little more.

We also have fruit salad and some muffins made from our sour cherry tree. Sugar and carb fest, yikes!

My day got away from me so I took store bought rotisserie chicken (Costco) and cut up the breast, a little cheese, onions, peppers(sautéed really fast, while I picked the chicken) sour cream, scallions and chives.

I think it took longer to explain than it did to make...lol, except the sautee part (act 7 mins total)
