My house smells like a zillion frying sweet onions! Making mujadarrah today....

So easy - simmer lentils, rice, pepper and salt in water until absorbed - fry up 3 or 4 big sweet onions, thinly sliced, in olive oil until they are caramelized and quite brown. Mix half into the lentil rice mix, leave the other half to put on top.

Amazing how the simplest things can taste the best.....dinner will be ready soon!

I have a bunch of onions so maybe tomorrow when the high temperature is only 94 instead of 99 I'll make a batch of onion confit. That should be enough to drown out the fragrance of a cat box used by a cat with renal disease.

Mujadarrah sounds good, too, though. It's one of my favorite things.
