Incredible prosciutto and arugula pizza!

http://cookingwiththemark.blogspot.com

Ingredients
I bag Trader Joes's Pizza dough
1/2 jar Trader Joe's Pizza sauce
1 bag Trader Joe's Quattro Fromaggio cheese mixture
1 package prosciutto (4-6 ounces) chopped
1 T capers
!/2 onion chopped
4-5 cups baby spinach, chopped
Handful of arugula, chopped

Directions
Chop prosciutto into small gnarly bitts and saute in a non stick pan until crunchy. Set aside. Carmalize onion in a separate pan. Set aside. Roll out pizza dough and smear with pizza sauce. Add prosciutto, spinach, onions, capers, and top with quatro fromaggio cheese and bake for about 35 minutes at 350°. Add chopped arugula and bake an additional 10 minutes.

My mate makes something similar with four times as much caramelized onion. That way the onion is a sauce replacement.

I'm not a huge red sauce fan for pizzas so I am always looking for other ideas! Thanks!
