We are busy taking care of business before we hit the road in a few days. Meeting with people who are going to do different repairs and just watching the $$$ drain from the bank account.

But, it will be great when it is all done.

and sweet potatoes.

I made it earlier in the day, as I had to work tonight and didn't get home until late.

Made a mayonnaise/roasted tomato sauce to go with it.

The sweet potatoes were just baked and I slipped one out of its jacket, mashed it, and put a little olive oil "butter" on it.

Very simple meal, but very good.
