We are looking at some bad weather coming in and it may be difficult to leave the boat for a few days.

Stir-fry rice with a little steak mixed in.

Basic recipe (I use chicken thighs)

chicken, seasoned, floured and sauteed in olive oil, stove top -
set aside while the veggies saute in the same pan -

onion
garlic
bell pepper
mushrooms

all simmered, low in -

diced tomatoes w/ juice
chicken broth
white wine

with -

oregano
basil
thyme
capers
black pepper
salt

I like it a bit thick so it can be served as is or as a sauce over pasta. If it's not to my taste, I pull the chicken and thicken with a bit of corn starch dissolved in cold broth...

6. roasting off a turkey -- great bargain after Easter

The store tried very hard to get rid of all its fresh turkeys by marking them way down on Monday. Yayy! A bargain!

So I'm roasting it off in the traditional way and we'll eat it for days. Turkey sandwiches, yum yum.

The cats and the border collie are rolling their eyes already. Turkey bits tonight!

Chicken thighs were on sale - an 8 pack. Sold. Two for tonight and freeze the others. Potatoes will be there for another meal.

included a package of chicken thighs -- also on sale. They're already frozen, though, so I have to cook at the same time.
