A new take on rarebit

Ingredients
1/2 cup beer
2 gren onions, finely chopped
3 cups cheddar cheese, grated
4 slices of toasted bread
a pinch of cayenne pepper
2 T Dijon mustard
1 tomato chopped
1 T butter
1 t garlic powder

Directions
Melt butter in a saucepan and saute onions for 5 minutes. Then add beer and bring to a boil. Reduce heat and add mustard, cayenne, and garlic powder. Whisk ingredients and slowly add cheese, whisking the continuously. When it's thoroughly blended, quickly pour over toast.. Top with tomatoes and serve.

Love rarebit and have always put dried mustard in when I've made it...will try this version...

I used a couple of different cheeses. It was like fondue on a plate!

Your recipe looks great and I love the addition of tomatoes.
