1/2 cup beer
2 gren onions, finely chopped
3 cups cheddar cheese, grated
4 slices of toasted bread
a pinch of cayenne pepper
2 T Dijon mustard
1 tomato chopped
1 T butter
1 t garlic powder
Directions
Melt butter in a saucepan and saute onions for 5 minutes. Then add beer and bring to a boil. Reduce heat and add mustard, cayenne, and garlic powder. Whisk ingredients and slowly add cheese, whisking the continuously. When it's thoroughly blended, quickly pour over toast.. Top with tomatoes and serve.

And I prefer the dried mustard. I shall try the green onions, though.

Your recipe looks great and I love the addition of tomatoes.
