Perfect leg of lamb

There's nothing quite like a leg of lamb. And it doesn't have to be Easter to cook one. I highly recommend the boneless leg of lamb from Costco. I find carving a leg of lamb with a bone in to be a real pain. The beauty is this roast has something for everyone--from rare to well done. And the leftovers can be used in stir fries, curries, whatever!

Ingredients
1 leg of lamb (4 pounds or so)
garlic powder
black pepper
salt
dried oregano

Directions
Heat oven to 450°. Remove lamb from package but leave string/netting on. Sprinkle liberally with the spices. Place on a cookie rack over a baking pan and bung it in the oven. Immediately reduce heat to 350° and roast 25-30 minutes per pound. Check temp with a meat thermometer. It should read around 165° or 170° on the end and around 140° in the middle. Remove from oven and place on serving platter. Cover with aluminum foil and a couple towels and let rest for 10 minutes. Carve and serve immediately.

(I think I like that even better than the original roast!)
