1. Homemade quiche

Just in the mood for it.

2. Pizza with sliced portobello mushrooms/shallots/provolone and asagio cheeses and a salad

3. Enchiladas montadas (stacked enchiladas). Small corn tortillas layered with shredded chicken,

green chili sauce, sauteed onions, shredded queso blanco. Chicken is already cooked. All it takes is to saute the onions, pan fry the tortillas a bit to soften, layer all and bake till warmed through.

Sides of rice, black beans, sliced avocado & lime. Tangerines.

Real good green chili based dish I picked up from a friend in New Mexico.

4. sounds tasty

i made something similar years ago, but it was with the dreaded cream of chicken soup. i never think to make this, i'll have to put it on my quick and easy list.

5. Ah. Best to keep it clean and green. Not a whole lot of sauce. Somewhat toasty is the idea, I think.

Not a typical baked enchilada in a sauce dish.

7. Bacon and eggs.

Feeling a bit off today and that sounded good to me.

8. Macaroni elbows

mixed with sauteed squash, tomatoes and green onions in an easy white sauce. I'm low on groceries! This was thrown together!
