Pizza with prosciutto and caramelized onions

Ingredients
Trader Joe's pizza dough
1/2 jar Trader Joe's pizza sauce
1 large onion chopped
1/2 bag frozen artichokes, halved
4-6 oz. prosciutto, chopped
1/2 pound sliced mushrooms
1/2 jar roasted red peppers
1 package quattro formaggio cheese

Directions
Cook prosciutto in a non-stick pan (without oil) until crispy. Remove and place on paper toweling. In the same pan, add a bit of olive oil and sauté onions over medium/low heat until caramelized--. Remove. Then sauté mushrooms until they brown. Roll out dough and place on pizza pan. Top with sauce, then all the toppings. Cover with a generous amount of cheese and bake in a 375° oven until cheese is golden brown, about 45 minutes. I let the pizza rest for 10 minutes on a cookie rack to prevent the crust from getting soggy.

1. My mate makes a white pizza with just prosciutto and caramelized onions.

Three times the onions of that recipe, same amount of prosciutto, about 5-6 oz of shredded mozzarella. Sometimes roasted red peppers, oil cured olives, or artichokes also go on but never more than one. That way the caramelized onion remains the star vegetable.

I make white pizzas once in a while. Sometimes I put fresh slices of tomatoes on top of the cheese. Pesto pizzas are pretty decent as well.

There is something really good about the combination of the salty prosciutto and bitter arugula.

might like:

Pancetta ...tj's has it in small cubes.
Leeks..tj's sells them precleaned.
A sweet onion.
Shredded gruyere and Swiss..look in the cheese section for the package.

Render the pancetta until it is crispy. Remove from the pan with a slotted spoon and drain on a paper towel. In the rendered fat, sweat the onion, then the leeks. Salt and pepper to taste. Use the caramelized onions and leeks as sauce, top with entire package of cheese, and get it nicely browned.

This is excellent the next morning, heated up with a fried egg on top.
