Foolproof baked salmon

Ingredients
1 salmon filet
mayonaise
paprika
freshly squeezed lemon juice
garlic powder
capers

Directions
Rinse the salmon in cold water and pat dry. Place on a baking pan and squeeze lemon juice on it. Let it marinate for 10 to 15 minutes. Pat dry and sprinkle garlic powder on the filet. Coat with mayo and shake paprika on top. Bake at 375° for 15 minutes or until salmon flakes easily. Serve with capers.

because the emulsion tends to stay put a little bit longer in a hot oven, delivering the lovely oil to the food instead of to the bottom of the pan.

My own favorite use for it is on bland chicken breasts followed by the coating du jour. The result is crispy chicken that almost tastes like deep fried.

This looks like a great way to cook salmon. You can't go wrong with salmon, lemon and capers.

A way I sometimes prepare salmon is

salmon filets
lemon & pepper spice
some freshly squeezed lemon juice
a few julienne slices of raw onion and green/red bell pepper. I'll usually put 6-8-10 julienne strips on top of the filet.

Wrap in foil. Place in oven or even on the grill. The foil keeps the steam and flavor in.
