1. We're making Cuban sandwiches for our best friends. Its a pannini with ham, roast pork....

Swiss cheese, dill pickles and whole grain mustard. Cream of broccoli soup on the side.

We're mimicking dishes from a local pizzeria and I'm optimistic we can pull off a decent interpretation. Knock wood.

2. Pot roast

Got a chuck roast on sale yesterday, will make in the oven with potatoes, carrots, celery and onions, probably in a roasting bag. Coleslaw, green beans, biscuits.

7. I cooked some kale last night and it was horrible.

It was tough, chewy and I spit the first bite out.

I stemmed and *deveined* it, chopped it coarsely and sautéed with some onions and olive oil.

Do you think it was the quality of the kale I bought or my cooking method?

For use other than in a bean pot, I steam it for 10 minutes, then chop it. I use stems and all, but you have to chop them pretty small. I then saute it with bacon and onions. Typically, it then goes into a casserole dish under a layer of pork chops and mashed potatoes and gets cooked for another 40 minutes or so. This isn't nouvelle cuisine. It's peasant fare. You have to pummel it 'til it hollers uncle.

I felt when I was cooking it (using a recipe) that it was not going to cook nearly long enough.

I like greens, but generally cook the daylights out of them.

OTOH, I have made a raw kale slaw that I really liked. It's that partially cooked way that just doesn't work.

Thanks for the input.

(BTW, peasant food is just about my favorite food ever, and I love it from just about any culture).

Don't feel much like celebrating, too much sadness in my life this week. But HE wants to do this for me, and the gift is for the giver. I'd just as soon curl up under a blanket and not come out ever again.

We had green salad with vegetables, potatoes baked in sherry with butter, thyme, and garlic, and turkey soup with farfalle.

For dessert we had oatmeal bars (a no-sugar, lowfat version) that I baked and we put dark chocolate on top.
