My husband has classes for the new tax year tonight, so I am on my own as he will have dinner with his office mates (paid for by the owners of the franchise).

Cauliflower roasted with olive oil & garlic, brown/wild rice, arugula salad with lemon vinaigrette!

Yet they can be a great main plate like you're putting together. (I add shredded cheese on top at the end of the broil on mine).

with mashed potatoes, a romaine salad with tomato, red cabbage, onion, carrot, and artichoke hearts (our first salad in 2 weeks!) and ciabatta rolls. Keeping it simple after the flu.
