Which are kind of a homemade hot pocket, filled with ground beef and cabbage. Filling and tasty and kid-pleasing. I'll make the filling and let my 16 year old son do the rest while I work this evening. He likes to work with dough, but hasn't, shall we say, gotten into the Zen of chopping vegetables. I think his dad and 19 year old brother, coming home from college today, will like them.

Here's the recipe we're using: http://www.breadworld.com/Recipe.aspx?id=348 (omitting the American cheese and adding some mustard to the filling).

I work 3 or 5 nights a week, so don't cook as much as I once did. Just wanted to say hi to you all.

Overcast, chilly, damp.

And you can never go wrong with a waldorf salad, imo.

Enjoy!

It's sunny and in the mid 50's here, so unusual for Pennsylvania in mid November. Hope it stays this way for Thanksgiving Day.

Carrots. Not sure yet about potatoes.

On edit: Decided on a baked potato with butter.

Two flour tortillas to make a quesadilla "sandwich" of sorts. Filled with -

Refried beans
Shredded beef
Shredded Monterey Jack
Sliced avocado
Pico de gallo
Lime juice

Browned flat on both sides in a skillet. Quartered on the plate.

we're going out.

The occasional Saturday evenings when I'm home and not working, we go out (actually, if I'm not home, partner still takes my Mom out...she lives with us...she's 91!)...something pretty CHEAP but still, no dishes or pans to clean up.

*Sigh*
