I really like the big picture on cooking. This seems along that line. My niece has scored a lead chef position at a CA winery. She's a Chez Panisse alumna, did two internships in central Italy...yet when we talk food she talks about local mushrooms, found greens and playing with what's on hand. She's got a real playful passion for food not menus or recipes.
