Pumpkin Pie Recipe

I have a nice sugar pumpkin from my garden and am going to make a couple pies today.
If anyone has an extra special recipe or ingredient they could share I'd appreciate it. I was thinking
adding some carmel.

Also' some recipes recommended roasting with a little olive oil while others suggest water,
any preference?

If not, i'd check allrecipes.com
They usually have great reviews of member tested recipes.

Ingredients
2 1/2 cups (12 1/2 ounces) unbleached all-purpose flour
1 teaspoon table salt
2 tablespoons sugar
12 tablespoons (1 1/2 sticks) cold unsalted butter, cut into 1/4-inch slices
1/2 cup cold vegetable shortening, cut into 4 pieces
1/4 cup cold vodka
1/4 cup cold water

Then after you get the peel off let it sit in a strainer for several hours to drain off as much liquid as possible. I've heard some swear by a second roasting of mashed pumpkin on parchment to get the flesh as condensed as possible.

I like pecans on top of my pumpkin pie. I sometimes cheat and use the spicy/sweet ones from trader joes. It's also fun to actually do a real pecan pie filling on top.

I'll assume roasting with a little olive oil opposed to the water with pulp side down.
