Black beans and yellow rice

Here's an old favorite for those that like to use a crock pot:

2 cups (about 1 pound) dried black beans, soaked overnight
3 tablespoons extra-virgin olive oil
1 medium onion, diced
1 Scotch Bonnet pepper (or similar heat pepper), chopped (more to taste)
3 cloves garlic, chopped
2 tsp. Tabasco Sauce (additional to heat index desired)
Freshly ground black pepper

Yellow Rice:

2 cups long-grain rice
4 cups water
2 cloves garlic, minced
1 tablespoon turmeric
1 teaspoon salt
Dash of Oregano and Basil

Cook the beans in the crock pot all day on low, then make the rice. Sometimes, I set the crock on high for about an hour to get things going along, then set it back to low. Easy dinner, and tastes delicious. Add sausage to the beans in the crock pot for an extra hearty meal. Simple, but delicious
