HOW can it be October already?
Time is going by tooooooo fast.

(22,144 posts)We're having cream cheese enchiladas, refried beans and an avocado/tomato salad. Putting the first coat of polyurethane on the floor this afternoon and then two more times 10 hours apart and we'll be done . It's such a beautiful, sunny day here. Too nice to work!

(22,144 posts)(Earthquake weather= hot weather and October). Thanks for the congrats. The first coat is on and wow!! It really makes the color of the oak pop....I'll post a pic when all the coats are done. We're using semi-gloss, so it won't be super shiny.

(106,886 posts)Sliced for a finger food plate, served as an appetizer with salsa, cold bean dip and tortilla chips on the side. And the cream cheese filling can be tweaked in any number of ways. I add jalapenos, diced.

(146,218 posts)It was excellent, but I had to cook the whole 1 1/2 pounds after defrosting, and we ate about 1/3 of it.
It's rare and I am reluctant to cook it any further.
I am thinking about steak salad. I also have some excellent roasted beets, an avocado that needs to be eaten today, lettuce and tomatoes.
Might throw some cheese in there as well.
Yesterday's apple/peach crisp was fantastic! I expected to have that for today as well, but HE finished it off sometime between when I went to bed and when I got up, lol.

(106,886 posts)Last night got cut short by a raccoon family. Mom's been leading a 3 AM route through the neighborhood recently. My block was on the agenda. Lot's of chattering, running back and forth. When I stirred, she stood upright, came up a bit, arms out and hissed. While the kids booked. Figured they could have their middle of the night territory. Went in and back to bed.
Cool that you had a swim.

(11,360 posts)... you press together handfuls of rice into a sort of flat rounded triangle. Then you push a little thumb hole into the middle, and fill it with a piece of something tasty (this is usually a bit of fish, or pickled plum - fake crab works pretty well). You can put a little strip of nori over the top after that if you have it. Serve cold with ginger, wasabi, and soy sauce.

(146,218 posts)We had some raw yellowtail recently and I tried to make little mounds of rice, but they fell apart. I can see how add a little bit of water via wet hands would have helped.
Will try that next time.

(32,084 posts)With homemade salsa. Put too much salt in the salsa, but the beans were unsalted, so it balanced out okay.
As for it being October already, those are my sentiments EXACTLY!

(12,253 posts)Then, I mashed Bliss potatoes with goats milk and butter, Tossed a purple lettuce salad with cucumber, tomato, and red onion while our lovely rosy-in-the-center lamb chops leftover from last night warmed in the gravy for just enough time to heat them through. Oh, I also made those fluffy goat yogurt biscuits that are so tender they melt in the mouth.
I have a whole wheat loaf on the rise now for tomorrow. Welcome, Fall! Please, no Halloween snowstorm this year!
